About Malt

When spring arrives, grains and pulses in the ground are activated by mild temperatures and rainfall, which triggers enzyme production to generate the nutrients needed for growth.

The malting process mimics this elegant and natural process using fresh water and hot air in a controlled way, transforming the grain through biochemical activity.

How does it work?

Grains and pulses are soaked in water leading to an increase in moisture which causes the embryo to tap into starchy energy reserves for growth. This initiates sprouting, a germination of the seed.

During germination, enzymes digest cell walls and starch reserves providing energy for growth. This process breaks down the seed matrix resulting in the creation of soluble proteins, essential amino acids and other nutrients with an enhanced bioavailability.

In malting, germination is stopped by reducing the moisture content preserving the nutrients within the seed.
